Comfort food spans cultures and geographic boundaries, because it is, in essence, food that is true to its roots. And because it has a sentimental appeal and brings on a sense of pure, unadulterated pleasure, it is nourishment for the stomach as well as for the spirit. The term “contemporary” appended to “comfort food” defines Basilio’s take on comfort food. At our restaurant, comfort food is Filipino in spirit because of Filipino ownership and values, but border-less in outlook, taste and presentation because of the varied influences of international cuisines. Other recipes are tweaked with the addition of luxurious ingredients like foie gras, blue cheese, pure milk chocolate and Champagne.
