Chef Pablo Basilio (PV) Valdez is a culinary professional with advanced studies in Culinary Arts at the Center for Culinary Arts Manila in 2000 and a special training at the Greystone Culinary Institue of America in Napa Valley, California.  He has worked at several top fine dining establishment in the Philippines where he gained practical experience and also had orientation tours in Spain, France and Greece further honing his culinary skills.  Chef PV is a Business Management graduate from De La Salle University in 1998.

Chef Jeff Catral

A culinary professional, Chef Jeffrey Catral is Basilio’s Chef Consultant and helps keep the restaurant’s menu and operational programs at the right track.  Chef Jeff earned his formal training at the Los Angeles Culinary Institute in Encino, California in 1997.  He spent a few years working with several American fine dining restaurants in the US West Coast as Garde Manger, Sous Chef and Executive Chef and specialized on Asian, European, American and Filipino cuisines.  Now based in Manila, Chef Jeff is connected with the Bureau Restaurant & Bar while also providing consultancy services to several local fine dining restaurants, teaches at the American Hospitality Academy (AHA), Philippines and a TESDA Certified Assessor.  He’s well known in the local culinary industry often guesting for cooking demonstrations conducted by major food sponsors and TV shows.  He also participates in cooking competitions, which usually earn him top prize positions.
